<p><b>Le croquant</b></p>
<p>Mélanger le chocolat fondu au bain marie et la feuilletine, le laisser refroidir, puis l’émietter et le réserver.</p>

<p><b>La mousse caramel-café</b></p>
<p>Cuire dans une casserole à fond épais le sucre le glucose et l’eau jusqu’à 180°C, pendant ce temps porter  à l’ébullition la crème fraîche et le lait, puis le verser  en deux trois fois sur le sucre cuit pour stopper sa cuisson quand il arrive à 180°C tout en faisant attention, remettre 5 minutes sur feu en remuant, puis laisser descendre sa température à 70°C-68°C.</p>

<p>Fouetter un peu les jaunes d’œuf, et ajouter le contenu de la casserole en remuant, remettre sur feu et cuire toujours en tournant  sans dépasser 83°C.</p>

<p>Hors feu, ajouter le café soluble et remuer énergiquement, puis laisser refroidir entre 55°C-60°C, à cette température, incorporer la gélatine ramollie et fondue.</p>

<p><b>Montage</b></p>
<p>Couper deux disques de biscuit roulade chocolat de 20 cm et de 15 cm de diamètre et un rectangle de 50 cm/10 cm, puis une bande de 46 cm / 4 cm.</p>
<p><b>Pour l’entremet</b></p>
<p>Placer le disque de biscuit  de 20 cm de diamètre dans un cadre de 22 cm de diamètre/ 6 cm de hauteur, l’imbiber avec le sirop  au goût café, ajouter une couche de mousse, puis un peu de croquant suivi par le deuxième disque de biscuit roulade de 15 cm de diamètre.</p>
<p>Imbiber le biscuit, ajouter un peu de croquant et couvrir par la mousse, l’égaliser par une spatule et la mettre au congélateur une nuit.</p>

<p><b>Pour la bûche</b></p>
<p>Placer dans une gouttière  de 50 cm (moule à bûche) un papier plastifié dure pour faciliter le démoulage.</p>
<p>Verser  la mousse à mi-hauteur, suivi par une bande de biscuit de 46 cm/4 cm, l’imbiber par le sirop au goût café puis remplir par la mousse  et croquant et terminer par la bande de biscuit de 50cm / 10 cm, l’imbiber de sirop au gout café, puis envelopper par un film alimentaire et la mettre au congélateur une nuit.</p>

<p><b>Décoration de l’entremet</b></p>
<p>Mélanger  le nappage et le caramel -café et fouetter énergiquement.</p>
<p>Mettre quelques taches de glaçage noir sur l’entremet et verser le mélange, l’égaliser avec une spatule et le décorer selon le goût avec du chocolat, des macarons et des motifs à sucre.</p>

<p>Démouler la bûche et la couper en deux parts égales pour avoir deux bûches à décoration différentes, Pulvériser  ou glacer les bûches et les décorer par le glaçage noir et le caramel café, des macarons,des meringues et des motifs à sucre.</p>
