<li>20 gr de beurre de cacao</li>
<li>Un soupçon de colorant alimentaire vert</li>

<li>150 gr de pâte d’amande à 33%</li>
<li>Une pointe de c à c de mégarôme menthe</li>
</ul>

<p><b>Préparation </b></p>
<p>Faire fondre le beurre de cacao et le faire colorer avec un peu de colorant vert et laisser reposer</p>
<p>Avec le doigt garnir les empreintes du moule à chocolat juste avec le beurre de cacao coloré sans touché au dépôt de colorant qui au fond, puis laisser durcir (on peut mettre  le mouledans sachet alimentaire et le mettre  à durcir  au congélateur)</p>

<p>Faire fondre au bain marie la moitié du chocolat riche noir</p>
<p>Hors feu ajouter l’autre moitié</p>
<p>Et tourner énergiquement pour le refroidir et le rendre brillant</p>
<p>Normalement la température qui a atteint 45°C doit descendre à 29°C puis remonter à 31°C en remettant au bain marie</p>

<p>Remplir les empreintes du moule, utiliser le doigt pour bien adhérer le chocolat fondu sur les bords et le fond des empreintes</p>
<p>Taper le moule sur le plan de travail pour enlever les bulles d’air</p>
<p>Enlever l’excédent  de chocolat (ce chocolat sera réutilisé pour fermer les empreintes)</p>
<p>Racler le moule et laisser durcir</p>

<p><b>La farce et finition</b></p>
<p>Aromatiser la pâte d’amande avec le mégarôme de  menthe, bien pétrir</p>
<p>Remplir les empreintes du moule chocolaté en laissant 2 mm au bord supérieur</p>
<p>Fermer les empreintes par le chocolat riche noir fondu</p>
<p>Racler</p>
<p>Laisser durcir au congélateur</p>
<p>Taper le moule sur le plan de travail pour récupérer les chocolats farcis</p>
