<p>Voilà une merveilleuse et délicieuse bûche au fromage et à la ganache, sans génoise, facile et rapide à préparer pour vos moments de fêtes</p>
<p><strong>Ingrédients</strong></p>
<ul>
<li>Des biscuits à la cuillères ou boudoirsبسكويت</li>
<li>Un peu de lait حليب</li>
<li>150 gr de crème fraîche cuissonكريمه الطبخ</li>
<li>150 gr de chocolat richeشكولاطة جيدة</li>
<li>200 gr de crème fraîche froideكريمة الخفق باردة</li>
<li>170 à 200 gr de fromage à tartinerجبن الدهن</li>
<li>50 gr de sucre glaceسكر ناعم أي صقيل</li>
<li>Un peu de noix de coco râpée pour la décoقليل جوز الهند</li>
</ul>
<p><strong>Préparation</strong></p>
<p>Filmer un plateau, tremper les biscuits dans le lait et les disposer sur le plateau la face sucrée en haut voir la vidéo</p>
<p>Filmer les biscuits et les mettre au réfrigérateur une heure</p>
<p>Dans une casserole, mettre la crème fraîche cuisson et le chocolat riche, mettre sur feu doux en remuant pour faire fondre le chocolat : laisser refroidir la ganache</p>
<p>Mettre dans un récipient, la crème fraîche froide, le fromage et le sucre glace et montrer la chantilly au fromage, réserver un peu dans une poche pour couvrir le roulé ou la bûche</p>
<p>Étaler la ganache sur les biscuits, center la chantilly au fromage</p>
<p>Rapprocher les deux bords opposés de telle sorte à former une bûche en s’aidant de film alimentaire : voir comment procéder dans la vidéo</p>
<p>Mettre le roulé un peu au congélateur</p>
<p>Mettre le roulé sur le plat de service, le couvrir par la chantilly réservée, le décorer selon le goût et le saupoudrer par la noix de coco<br />

<li>30 gr de fécule de maïs</li>
<li>Un peu de mégarôme citron</li>

<p><b>La ganache blanche aromatisée</b></p>
<p>Porter à l’ébullition la crème fraîche cuisson, ajouter  hors feu la fécule de maïs, tourner énergiquement ,passer le mélange à travers une passoire et le remettre sur feu pour épaissir un peu tout en remuant.</p>
<p>Hors feu ajouter le chocolat et remuer pour le dissoudre.</p>

<p>Tamiser ensemble la poudre d’amande et le sucre glace spécial (tant pour tant)</p>
<p>Etaler sur une plaque recouverte d’une silicone, et enfourner à 80°C  25 minutes sans dorer juste pour enlever son humidité</p>

<p>Peser 250 gr du tant pour tant et ajouter les 40 gr des blancs d’œufs non battus et mélanger à la spatule énergiquement pour avoir une pâte homogène, diviser cette masse en deux parts  égales, à l’une ajouter le colorant alimentaire noir et mélanger, à l’autre ajouter le colorant alimentaire blanc et mélanger. Réserver les deux pâtes.</p>

<p><b>La meringue italienne</b></p>
<p>Faire cuire le sucre en poudre avec l’eau, dans une casserole à fond épais</p>
<p>A la température110°C, commencer à monter en neige à vitesse moyenne, les 50 gr des blancs d’œufs déjà placés dans un robot à fouet</p>
<p>A 120°C, augmenter la vitesse du robot et verser en filet le sirop en faisant attention</p>
<p>Laisser tourner le robot jusqu’à formation d’un bec d’oiseau et refroidissement de la meringue.</p>

<p><b>Le macaronnage</b></p>
<p>Diviser la meringue en deux parts égales pour les deux sortes de pâte noire et blanche</p>
<p>Délayer la pâte d’amande avec un peu de meringue, puis ajouter le reste et macaronner  dans un seul sens sans trop travailler les blancs</p>
<p>Arrêter le macaronnage, quand le mélange devient brillant et coule délicatement de la spatule</p>

<p>Mettre les deux mélanges dans deux  poches différentes et façonner quelques coques noirs  et blancs, puis   mettre ces poches  dans une troisième poche à douille (7 mm) et façonner des disques  bicolores de 3,5 cm diamètre</p>
<p>Laisser croûter loin de l’humidité 1 heure au moins, ils ne doivent plus coller au doigt.</p>

<p><b>La cuisson</b></p>
<p>Enfourner dans un four à 145°C chaleur tournante 20à 25 minutes voir 30 selon la taille des macarons</p>
<p>La formation de l’anneau signe de réussite des macarons</p>
<p>Toucher les coques dans le four, s’ils sont durs c’est qu’ils sont cuits</p>
<p>Après cuisson, glisser la silicone sur le plan de travail, laisser refroidir et mettre les coques dans une boite fermée  et réserver au congélateur</p>
<p><b>La garniture : la ganache noire pralinée</b></p>
<p>Porter à l’ébullition la crème fraîche et le glucose et le praliné. Ajouter hors feu le chocolat, tourner énergiquement jusqu’à incorporation complète.</p>
<p>Ajouter le beurre et tourner avec une cuillère.</p>
<p>La ganache obtenue est brillante.</p>
<p>Mettre la préparation dans une poche à douille cannelée, laisser durcir  épaissir le chocolat au frais et garnir les coques.</p>

<li>100 ml de crème fraîche cuisson</li>
<li>20 gr de glucose</li>
<li>20 gr de beurre doux.</li>

<p><b>Préparation</b></p>
<p><b>La pâte d’amande</b></p>
<p>Tamiser ensemble la poudre d’amande et le sucre glace spécial (tant pour tant)</p>
<p>Etaler sur une plaque recouverte d’une silicone, et enfourner à 80°C  25 minutes sans dorer juste pour enlever son humidité</p>
<p>Tamiser de nouveau  le tant pour tant à la sortie du four</p>

<p><b>La meringue italienne</b></p>
<p>Faire cuire le sucre en poudre avec l’eau, dans une casserole à fond épais</p>
<p>A la température 100-110°C, commencer à monter en neige à vitesse moyenne, les 50 gr des blancs d’œufs déjà placés dans un robot à fouet</p>
<p>A 121°C, augmenter la vitesse du robot et verser en filet le sirop en faisant attention</p>
<p>Laisser tourner le robot jusqu’à formation d’un bec d’oiseau et refroidissement de la meringue.</p>

<p><b>Le macaronnage</b></p>
<p>Délayer la pâte d’amande avec un peu de meringue, puis ajouter le reste et macaronner sans trop travailler les blancs</p>
<p>Arrêter le macaronnage, quand le mélange devient brillant et coule délicatement de la spatule</p>
<p>Mettre dans une poche à douille (7 mm) et façonner des disques de diamètre souhaité</p>
<p>Laisser croûter loin de l’humidité 1 heure au moins, ils ne doivent plus coller au doigt.</p>

<p><b>La cuisson</b></p>
<p>Enfourner dans un four à 145°C chaleur tournante 15 à 20 minutes voir 25 selon la taille des macarons</p>
<p>La formation de l’anneau (la colle) signe de réussite des macarons</p>
<p>Toucher les coques dans le four, s’ils sont durs c’est qu’ils sont cuits</p>
<p>Après cuisson, glisser la silicone sur le plan de travail, laisser refroidir et mettre les coques dans une boite fermée  et réserver au congélateur</p>
<p>Garnir juste une heure avant de servir car les coques deviennent moins croquants</p>

<p><b>La garniture : la ganache noire</b></p>
<p>Porter à l’ébullition la crème fraîche et le glucose. Ajouter hors feu le chocolat, tourner énergiquement jusqu’à incorporation complète.</p>
<p>Ajouter le beurre et tourner avec une cuillère.</p>
<p>La ganache obtenue est brillante.</p>

<li>50 gr de praliné aux amandes</li>
<li>30 gr de pistache</li>
<li>30 gr d’abricot séchés</li>

<p><b>Préparation</b></p>
<p><b>Le nougat aux graines de sésames</b></p>
<p>Pour ce nougat aux graines de sésames, choisir soit les graines sésames ordinaires, soit les graines de sésames blanches ou encore un mélange  de  graines de sésames blanches et noires de telle sorte à choisir 4/5 blanches+1/5 noires.</p>
<p>Faire fondre dans une casserole sans bouillir, le beurre, le sucre, le glucose et la crème fraîche.</p>
<p>Hors feu, ajouter la farine et le mélange  de  graines de sésames blanches et noires, remuer le mélange et le laisser refroidir.</p>

<p>Mettre la silicone GQ034 sur une silicone et remplir les trous carrés par la pâte sans déborder</p>
<p>Enfourner dans un four chaud jusqu’à dorure souhaitée, si le nougat déborde à la cuisson alors avant qu’elle ne durcisse remettez la à sa place avec une spatule</p>
<p>Garder les nougats cuits dans une boite fermée pour qu’ils gardent le croquant.</p>

<p><b>La ganache blanche aux fruits</b></p>
<p>Faire fondre au bain marie le chocolat blanc riche et le beurre de cacao, puis ajouter le praliné et mélanger avec un plongeur.</p>
<p>Ajouter la pistache  légèrement  grillée concassée et l’abricot coupé finement, puis remuer.</p>

<p>Mettre la ganache dans une poche et remplir à une hauteur de 1 cm les empreintes d’un moule de silicone de référence SF 105, mettre le moule dans le congélateur le temps de durcir.</p>

<p>Mélanger les ingrédients secs (farine, noix de coco, sel, vanille, et sucre glace) ajouter les blanc d’œuf et remuer à la cuillère en bois, puis ajouter enfin le beurre noisette tout en remuant pour avoir une pâte homogène.

<p>Mettre la préparation dans une poche et remplir en laissant 2mm les empreintes d’une silicone de référence SF043 et les empreintes d’une silicone de référence D106 taper les moules pour chasser l’air puis enfourner dans un four préchauffer à 160°C 10 à 15 min chaleur tournante</p>
<p>Démouler les financiers et les laisser refroidir sur une grille.</p>

<p>Hors feu, ajouter le chocolat blanc riche et la gélatine ramollie et remuer énergiquement, puis ajouter enfin le beurre et remuer pour avoir une brillance.</p>
<p>Laisser épaissir sans durcir la ganache au frais.</p>

<p>Mettre dans une casserole, la purée de noix de coco, le sucre et l’eau, puis chauffer le mélange jusqu’à première ébullition, puis  ajouter hors feu, le beurre fondu, la farine et fouetter énergiquement.</p>

<p>Chauffer une poêle antiadhésive, y déposer des cuillères à soupe du mélange.</p>
<p>Des petits trous apparaissent sur toute la surface de chaque tuiles avec une légère dorure tout au tour, à ce moment mettre la poêle hors feu, l’incliner pour enlever l’excédent du beurre, puis décoller chaque tuile délicatement et la déposer sur un torchon propre.</p>

<p>Tamiser ensemble la poudre d’amande et le sucre glace spécial (tant pour tant)</p>
<p>Etaler sur une plaque recouverte d’une silicone, et enfourner à 80°C  25 minutes sans dorer juste pour enlever son humidité</p>
<p>Tamiser de nouveau  le tant pour tant à la sortie du four</p>

<p><b>La meringue italienne</b></p>
<p>Faire cuire le sucre en poudre avec l’eau, dans une casserole à fond épais</p>
<p>A la température 100-110°C, commencer à monter en neige à vitesse moyenne, les 50 gr des blancs d’œufs déjà placés dans un robot à fouet</p>
<p>A 121°C, augmenter la vitesse du robot et verser en filet le sirop en faisant attention</p>
<p>Laisser tourner le robot jusqu’à formation d’un bec d’oiseau et refroidissement de la meringue.</p>

<p><b>La cuisson</b></p>
<p>Enfourner dans un four à 145°C chaleur tournante 15 à 20 minutes voir 25 selon la taille des macarons</p>
<p>La formation de l’anneau (le colle) signe de réussite des macarons</p>
<p>Toucher les coques dans le four, s’ils sont durs c’est qu’ils sont cuits</p>
<p>Après cuisson, glisser la silicone sur le plan de travail, laisser refroidir et mettre les coques dans une boite fermée  et réserver au congélateur</p>
<p>Garnir juste une heure avant de servir car les coques deviennent moins croquants</p>

<p>Porter à l’ébullition la crème fraîche et le glucose. Ajouter hors feu le chocolat, tourner énergiquement jusqu’à incorporation complète.</p>
<p>Ajouter le beurre et tourner avec une cuillère.</p>
<p>La ganache obtenue est brillante.</p>

<p>Allumer le four à 180°C</p>
<p>Dans une casserole, cuire le beurre doux 3 minutes pour qu’il ne mousse plus</p>
<p>Dans un robot, blanchir les œufs avec le sucre en poudre pour avoir une crème.</p>
<p>Ajouter en filet au robot le beurre tiédi, battre 3 minutes.</p>
<p>Baisser la vitesse du robot et ajouter à la cuillère les produits secs (farine+sel+levure chimique).</p>
<p>Mettre l’appareil dans une poche à douille ronde de petite taille.</p>

<p>Placer une silicone sur une plaque de four, façonner des disques de pâte de 3 cm espacés.</p>
<p>Enfourner 10 minutes à 180°C</p>
<p>Laisser refroidir les coques cuits sur une grille avant de les garnir.</p>

<p>Dans une casserole, porter à l’ébullition la crème fraîche, ajouter le praliné et remuer pour le diluer.</p>

<p><b>Préparation</b></p>
<p><b>Le sablé amande-cacao amer</b></p>
<p>Mettre tous les ingrédients du sablé dans le bol d’un robot, les mélanger doucement et les pétrir un peu, ou les mélanger à la main dans un saladier.</p>
<p>Etaler la pâte entre deux plastiques épaisseur 0,7 cm  utiliser un rouleau à motif pour avoir des carrés voir illustration et y couper des tringles avec une emporte pièce triangle de 4 cm de côté, placer les triangles sur une plaque recouverte d’une silicone.</p>
<p>Les enfourner dans un four chaud à 180°C 10 à 15 minutes.</p>

<p><b>La ganache café-caramel</b></p>
<p>Dans une casserole porter à l’ébullition la crème cuisson et le café, baisser le feu, ajouter le glucose, le caramel et remuer sans arrêter pour dissoudre le tout.</p>
<p>Hors feu, ajouter  le chocolat riche au lait, remuer énergiquement pour le diluer, sinon remettre sur feu très doux ou au bain marie toute en remuant, puis laisser refroidir la ganache.

<li>50 gr de crème fraiche cuisson</li>
<li>2 gouttes d’huile essentielle de lavande</li>

<p><b>Préparation </b></p>
<p>Faire fondre le beurre de cacao</p>
<p>Avec le doigt garnir les empreintes du moule à chocolat puis laisser durcir (on peut mettre au congélateur)</p>
<p>Faire fondre au bain marie la moitié du chocolat riche noir</p>
<p>Hors feu ajouter l’autre moitié et tourner énergiquement pour le refroidir et le rendre brillant</p>
<p>Normalement la température qui a atteint 45°C doit descendre à 29°C puis remonter à 31°C en le remettant sur le bain marie.</p>
<p>Remplir les empreintes du moule, utiliser le doigt pour bien adhérer le chocolat fondu sur les bords et le fond des empreintes, taper le moule sur le plan de travail pour enlever les bulles d’air</p>
<p>Enlever l’excédent de chocolat (sera utilisé pour fermer les empreintes)</p>
<p>Racler le moule et laisser durcir</p>

<p>Porter à l’ébullition la crème fraiche cuisson, hors feu ajouter le chocolat et deux gouttes d’huile essentielle de lavande alimentaire.</p>
