<p><b>Préparation </b></p>
<p>Voir <a href="http://lallalatifa.com/caramel-a-la-puree-de-la-fraise/">le caramel à la fraise ici</a>.juste un peu pour farcir</p>
<p>Faire fondre au bain marie la moitié du chocolat riche noir</p>
<p>Hors feu ajouter l’autre moitié</p>
<p>Et tourner énergiquement pour le refroidir et le rendre brillant</p>
<p>Normalement la température qui a atteint 45°C doit descendre à 29°C puis remonter à 31°C en remettant au bain marie</p>

<p>Remplir les empreintes du moule, utiliser le doigt pour bien adhérer le chocolat fondu sur les bords et le fond des empreintes</p>
<p>Taper le moule sur le plan de travail pour enlever les bulles d’air</p>
<p>Enlever l’excédent  de chocolat (ce chocolat sera réutilisé pour fermer les empreintes)</p>
<p>Racler le moule et laisser durcir</p>

<p><b>Le fourrage</b></p>
<p>Remplir les empreintes du moule chocolaté  par le caramel à la fraise ramolli en laissant 2 mm au bord supérieur</p>
<p>Fermer les empreintes par le chocolat riche noir fondu</p>
<p>Racler</p>
<p>Laisser durcir au congélateur</p>
<p>Taper le moule sur le plan de travail pour récupérer les chocolats farcis au caramel à la fraise.</p>
<p>Décorer les chocolats farcis par un brillant alimentaire bronze</p>

<p><b>Ganache rocher au croquant et noisettes</b></p>
<p>Faire fondre au bain marie 100 gr de chocolat noir riche et tourner énergiquement pour le tiédir</p>
<p>Si la feuilletine n’est pas croquante, alors mettez la un peu dans un four à feu moyen, ajouter à la moitié de ce chocolat la feuilletine et  remuer pour bien l’enrober, l’étaler sur une silicone pour sécher et ensuite l’émietter à la main</p>
<p>Ajouter les noisettes grillées à l’autre moitié du chocolat et  remuer pour bien l’enrober, l’étaler sur une silicone pour sécher</p>
<p>Le chocolat  permet  de garder le croquant et de ne pas se ramollir une fois mis dans la mousse.</p>

<p>Dans une casserole, porter à l’ébullition la crème fraîche cuisson et le glucose en remuant avec une cuillère en bois, Incorporer le praliné en tournant, s’il le faut chauffer un peu.</p>

<p>Hors feu, ajouter les 400 gr de chocolat riche noir et remuer jusqu’à incorporation complète,incorporer le beurre en remuant énergiquement,  laisser refroidir et ajouter la feuilletine enrobée de chocolat et émiettée, puis remuer.</p>

<p>Couvrir un moule d’une petite bûche par un film alimentaire pour faciliter le démoulage et le remplir par cette ganache, puis remplir  à moitié un autre moule pour un entremet</p>
<p>Ajouter quelques noisettes enrobées de chocolat et les enfoncer.</p>

<p><b>Bavarois au caramel</b></p>
<p>Dans une casserole à fond épais, faire cuire le sucre et le glucose à feu doux en surveillant, pour avoir une couleur miel foncée (186°C de température)</p>
<p>Hors feu ajouter le beurre et tourner pour arrêter la cuisson et ajouter la crème fraîche cuisson sans arrêter de tourner (tout en faisant attention).</p>

<p>Fouetter un peu les jaunes d’œufs et les ajouter au mélange en remuant énergiquement</p>
<p>Remettre sur feu doux en  remuant jusqu’à une température de 83°C à 85°C</p>
<p>Laisser tiédir (58°C-60°C) et incorporer la gélatine déjà ramollie dans de l’eau fraiche, puis laisser refroidir complètement avant d’incorporer la crème fraîche mi-montée</p>

<p><b>Pour entremet</b></p>
<p>Remplir à moitié un moule en silicone de forme demi-sphère et de diamètre 18 cm  par le bavarois au caramel</p>
<p>Placer au milieu la ganache rocher ronde, couvrir par le bavarois au caramel et remplir le moule, égaliser par une spatule à coude.</p>
<p>Mettre un disque de 17 cm de diamètre  de biscuit dacquoise à la noix de coco, envelopper par un film alimentaire et garder  l’entremet une nuit au congélateur.</p>

<p>Démouler la bûche, la couper en deux pour avoir deux bûche de 25 cm de long l&rsquo;une lisse et l&rsquo;autre à motif, puis démouler l&rsquo;entremet et  les poser sur une grille placée sur un plat pour récupérer le glaçage qui coule</p>
<p>Verser en couvrant toutes les bûches  et l&rsquo;entremet   par le glaçage,  récupérer le glaçage qui coule et répéter cette opération</p>
<p>Décorer selon le goût et mettre au frais</p>

<p>Garder le fouet et la vitesse 3,5 et ajouter par le trou l’arome de caramel et l’huile 1 min</p>
<p>enlever le fouet, il ne faut pas le laisser et ajouter  la farine et la levure chimique, régler 20 secondes / vitesse 10.</p>

<p><b>Financier choco-caramel</b></p>
<p>Mélanger les ingrédients secs (farine, amandes, sel, et sucre glace et poudre de cacao amer) ajouter  la trimoline, le mégarôme  caramel et les blancs d’œuf et remuer énergiquement à la cuillère en bois, incorporer  enfin le beurre noisette tout en remuant pour avoir une pâte homogène.</p>

<p>Pour les financiers qui sont cuits dans les empreintes d’une silicone de référence SF043, les laisser refroidir dans le moule, pendant ce temps faire fondre la pâte glacée au bain marie, puis à ce moment faire sortir le caramel au chocolat du congélateur le démouler et mettre une demi-sphère de caramel sur chaque financier.</p>
<p>Couvrir le tout par la pâte à glacer et laisser refroidir, décorer par un zig zag de chocolat au lait.</p>

<p>Etaler la pâte dans un sachet plastifié alimentaire (épaisseur 2mm), y couper des sablés  avec une emporte pièce</p>
<p>Enfourner les sablés dans un four chaud à 160°C 15 minutes.</p>

<p>Faire cuire dans une casserole à fond épais le sucre en poudre jusqu&rsquo;à couleur caramel, ajouter hors feu l’amande concassée grillée et  bien remuer  pour le faire dissoudre.</p>
<p>Etaler le nougat sur une silicone et y couper avec les ciseaux des rectangles.</p>
<p>Si le nougat durcit alors le remettre dans un four chaud pour le ramollir et continuer de y couper les rectangles</p>

<p>Coller deux sablés par le  Nestlé caramélisé, puis coller au dessus de ces sablés un rectangle de nougat avec un peu de chocolat sucré blanc fondu et finir par un zigzag avec le même chocolat.</p>

<p>Façonner des boules de 10 gr, les poser espacées sur une plaque recouverte d’une silicone et les aplatir avec une emporte pièce de ruche (chahda)</p>

<p><b>Préparation</b></p>
<p>Faire cuire dans une casserole à fond épais le sucre en poudre, le glucose et  75 gr d’eau jusqu’à la température 76 °C.</p>
<p>Eteindre le feu,  le laisser refroidir un peu et ajouter le reste d’eau et le café, remuer en faisant attention.</p>
<p>Sa consistance et sa couleur ressemblent à celles du miel.</p>
<p>Mettre le caramel dans une boite et le conserver au réfrigérateur pour longtemps.</p>

<p><b>Préparation</b></p>
<p>Dans une casserole, mettre le lait et le flan sucré caramel, puis porter à l’ébullition 3 minutes en remuant au cours de ce temps, ajouter une cuillère à soupe de caramel.</p>
<p>Verser la préparation  dans des verrines et laisser refroidir et durcir au frais.</p>

<p>Une fois  le flan refroidi, ajouter dans chaque verrine une cuillère à café de caramel, puis les biscuits émiettées et enfin une autre une cuillère à café de caramel.</p>
<p>Décorer par un biscuit de même genre.</p>

<p>Verser la préparation  dans le moule sur le caramel et laisser refroidir et durcir au frais.</p>

<p>Verser la préparation  dans le moule sur le flan caramel durci et laisser refroidir et durcir au frais.</p>
<p>Une fois le flan est prêt, le renverser sur le plat de service.</p>
